  • ½ cup white chocolate, melted and cooled
  • 2–3 tbsp milk
  • Fresh raspberries for decoration
  • White chocolate curls or shavings for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing and flouring them.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract and melted white chocolate.
  4. Gradually add dry ingredients alternating with whole milk until just combined.
  5. Evenly divide the batter among prepared pans and bake for 25–30 minutes or until a toothpick inserted comes out clean.
  6. For the raspberry filling, cook raspberries, sugar, and lemon juice over medium heat until softened. Stir in cornstarch slurry to thicken.
  7. For frosting, beat softened butter until creamy; gradually add powdered sugar followed by melted white chocolate and milk until desired consistency.
  8. Level cooled cakes if necessary, layer with frosting and raspberry filling, then frost the entire cake. Decorate as desired.
