  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 3 tablespoons cornstarch (for coating the tofu)
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press tofu between towels for 15 minutes to remove moisture.
  2. Cut into cubes and coat with cornstarch.
  3. Heat oil in a skillet over medium-high heat; fry tofu until golden brown on all sides.
  4. Remove tofu and sauté sliced peppers and onions until caramelized.
  5. Add garlic and ginger; stir for 30 seconds.
  6. Toss in pineapple chunks; caramelize for 2-3 minutes.
  7. Combine soy sauce, rice vinegar, and maple syrup in a bowl; pour over the skillet with tofu and mix gently.
