  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1/2 cup chopped pecans
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water; let sit for about 5 minutes.
  2. In a bowl, cream together room temperature vegan butter, brown sugar, and granulated sugar until smooth. Add maple syrup, vanilla bean paste, and the prepared flax egg.
  3. In another bowl, whisk together flour, cinnamon (or pumpkin pie spice), baking powder, and salt.
  4. Gradually mix dry ingredients into the wet mixture until just combined. Fold in chopped pecans.
  5. Form dough balls using a tablespoon or cookie scoop, roll in sugar, and chill for about 30 minutes.
