  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until it resembles wet sand. Press into the bottom of each cupcake liner.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, heavy cream, vanilla bean seeds, and extract.
  4. Pour the cheesecake mixture into the prepared crusts until about 3/4 full. Bake for 20–25 minutes until set but slightly jiggly.
  5. Cool at room temperature before refrigerating for at least two hours.
  6. Just before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
