  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)
  • 3/4 cup chicken broth
  • 2 tbsp dried cranberries (chopped)
  • 11/4 teaspoon kosher salt
  • 1 teaspoon salted butter (softened)
  • 1/2 tablespoon butter
  • 1/2 teaspoon turkey or poultry seasoning
  • 1/4 teaspoon kosher salt and fresh pepper (to taste)
  • 1 large egg (beaten)
  • 2 cups turkey or chicken broth for gravy
  • 2 leaves fresh sage for gravy
  • 3/4 teaspoon turkey or poultry seasoning for gravy
  • 1/4 cup all-purpose flour for gravy
  • Kosher salt and freshly ground black pepper (to taste) for gravy

Instructions

  1. Prepare the stuffing by sautéing onions and celery in butter until soft. Combine with bread cubes, herbs, seasonings, egg, cranberries, and broth.
  2. Lay out the turkey breast skin-side down and season lightly. Spread stuffing evenly on top, then roll tightly.
  3. Secure the roulade with kitchen twine at intervals.
  4. Preheat oven to 375°F (190°C). Place roulade seam-side down in a baking dish and cover loosely with foil. Bake for about 40 minutes, then uncover to crisp the skin.
  5. For gravy, combine drippings from the dish with flour and additional broth over heat.
