  • 1 1/2 cups fresh breadcrumbs
  • 1 1/2 pounds ground turkey
  • 1/2 cup finely minced onion (for meatballs and sauce)
  • 4 garlic cloves (pressed)
  • 15-ounce can organic pumpkin puree
  • 1 3/4 cups chicken stock
  • 2 tablespoons ghee or unsalted butter
  • Fresh sage
  • Grated parmesan cheese
  • 3 tablespoons milk
  • 1 tablespoon chopped parsley
  • 1 1/2 teaspoons Italian seasoning
  • 1 large whole egg plus 1 yolk
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup

Instructions

  1. In a bowl, combine breadcrumbs with milk; let soak for 3 minutes. Add onion, garlic, sage, parsley, Italian seasoning, parmesan, and eggs. Mix well.
  2. Gently incorporate ground turkey, salt, and pepper until just combined. Form into meatballs and chill in the freezer for 20 minutes.
  3. Heat oil in a skillet over medium-high heat. Sear meatballs until browned on all sides; set aside.
  4. In the same skillet, melt ghee and sauté onion until softened. Stir in garlic and Italian seasoning, then add pumpkin puree, chicken stock, salt, and pepper; stir until smooth.
  5. Simmer sauce for 2-3 minutes; then add parmesan cheese, heavy cream, maple syrup, and sage. Return meatballs to the sauce to warm through.
