  • 500 g butternut squash, peeled and chopped
  • 4 cloves garlic
  • 1 yellow onion, finely sliced
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g grated parmesan cheese
  • Juice of 1 lemon
  • 50 g turkey strips, chopped
  • 1 ball fresh mozzarella

Instructions

  1. Preheat your oven to 180ºC (350ºF).
  2. Spread the chopped butternut squash, onion, and garlic on a baking tray. Drizzle with olive oil and sprinkle rosemary on top.
  3. Roast in the oven for about 30 minutes until the squash is tender and golden.
  4. Transfer roasted vegetables to a blender; purée until smooth, adding water as needed.
  5. In a frying pan, heat olive oil over medium heat and cook turkey strips until crispy.
  6. Stir the butternut squash purée into the pan with some water and milk; add gnocchi and simmer for about 8-10 minutes until tender.
  7. Mix in parmesan cheese and lemon juice; adjust seasoning.
  8. Top with torn mozzarella and broil for about five minutes until melted.
  9. Garnish with remaining turkey strips, walnuts, and parsley before serving.
