  • 2 cups dry white grape juice
  • 2 cups chicken or turkey stock
  • 1 cup softened butter (herb rub)

  • 2 tablespoons fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 lemon (zested)
  • 4 cloves garlic (minced)
  • 3 teaspoons sea salt

Instructions

  1. Preheat oven to 300°F.
  2. Add 2 cups of water to a roasting pan.
  3. Combine melted butter, grape juice, and stock in a saucepan; set aside.
  4. Mix softened butter with chopped herbs, lemon zest, garlic, and salt for the herb rub.
  5. Rub herb mixture under the turkey skin and over the surface.
  6. Stuff with aromatics if desired; cover turkey with soaked cheesecloth.
