  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar (non-alcoholic)
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sear the beef belly pieces until browned on all sides (about 5-7 minutes). Remove from the pan.
  2. Sauté minced garlic and sliced ginger in the same pan for 1-2 minutes until fragrant.
  3. Return seared beef to the pan and add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for 1 to 1½ hours until beef is fork-tender and the sauce thickens.
  5. Taste and adjust seasoning if needed before serving hot over steamed rice garnished with chopped green onions and sesame seeds.
