  • 450g (1 lb) flank or sirloin steak
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup long-grain white rice
  • Salt and pepper, to taste
  • 1 tsp paprika
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt, as needed
  • 1 cup broth or water
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 2 cups shredded Monterey Jack cheese
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Pat the steak dry and season with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Heat a large skillet until hot and sear the steak for 4–5 minutes on each side. Transfer to a cutting board to rest.
  3. Rinse rice under cold water. In a pot, heat olive oil over medium heat; toast rice with garlic powder until lightly golden. Add broth or water and simmer for 18–20 minutes until fluffy.
  4. In the same skillet used for the steak, melt butter and sauté garlic. Slowly add milk and gradually stir in shredded cheeses until smooth.
  5. Serve by spooning rice onto plates, topping with sliced steak and queso sauce. Garnish as desired.
