  • 1 kg carrots, peeled and sliced
  • 1 medium onion, cut into eighths
  • 4 cloves garlic, smashed
  • 3 cm fresh ginger, thinly sliced
  • 1 red chili, roughly chopped
  • 3 tbsp miso paste
  • 1.6 L vegetable stock
  • Vegetable oil for roasting
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (or 180°C for fan ovens).
  2. Peel and slice carrots; reserve peels for topping. Cut onion into eighths, smash garlic, slice ginger, and chop red chili.
  3. Roast the reserved carrot peels in a small tin with salt, pepper, and vegetable oil for about 10 minutes until crisp.
  4. In a large roasting tin, combine carrots, onion, garlic, ginger, and chili. Season with salt and pepper; drizzle with oil and roast for approximately 35 minutes until tender.
  5. Prepare chili ginger oil by cooking matchstick ginger and chili in heated oil for one minute; add mixed seeds and cook another minute before setting aside.
  6. Blend roasted vegetables with miso paste and vegetable stock until smooth.
  7. Simmer blended soup over medium heat for five minutes.
  8. Serve topped with crispy carrot peels, spring onions, and chili ginger oil.
