  • 1 8 oz package reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, brown sugar, canola oil, honey, and vanilla until smooth.
  3. Gently fold in grated carrots, zucchini, and chopped walnuts.
  4. In another bowl, mix flour, baking powder, ginger, and baking soda.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Pour into a greased baking dish and bake for about 25 minutes or until a toothpick comes out clean.
  7. For the frosting, beat together cream cheese, icing sugar, and lemon zest until creamy.
  8. Once cooled, spread frosting over the bars and cut into squares.
