Instructions

  1. Preheat your oven to 425°F (220°C). Halve the bell peppers, remove seeds, and place them cut-side down on a lined baking sheet. Roast for 20-25 minutes until charred.
  2. While roasting, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Once cooled, peel the skins off the roasted peppers and blend them with sautéed garlic, heavy cream, salt, and pepper until smooth.
  4. Cook spaghetti in salted boiling water according to package instructions until al dente. Reserve some pasta water before draining.
  5. Combine drained spaghetti with the bell pepper sauce in the skillet over low heat. Stir gently to coat; add reserved pasta water if needed for consistency.
  6. Stir in grated Parmesan cheese until melted and serve immediately.
