  • 23 tablespoons extra virgin olive oil
  • 1/2 cup almond milk
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1 cup organic raisins
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube sweet potatoes; toss with olive oil, cinnamon, and nutmeg.
  3. Boil sweet potatoes until tender (15-20 minutes). Drain.
  4. Mash sweet potatoes with almond milk, vanilla extract, butter, brown sugar, and maple syrup until smooth.
  5. In a greased baking dish, layer half of the sweet potato mixture, followed by half of the raisins, marshmallows, and pecans. Repeat layering.
