  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper.
  3. In a stand mixer, cream the butter until smooth. Add brown sugar, molasses, and pumpkin puree; mix until combined.
  4. Incorporate the egg and beat for one minute.
  5. Gradually add dry ingredients to the wet mixture until just combined—be careful not to overmix.
  6. Chill the dough in plastic wrap for at least 30 minutes.
  7. Shape into balls, roll in sugar, and place on prepared baking sheets.
