  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper, to taste
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 2 large eggs, divided

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter over medium heat. Sauté onions until soft.
  3. Add garlic and mushrooms; cook until browned and moisture evaporates. Season with thyme, salt, and pepper.
  4. Stir in cream cheese and Parmesan until smooth, then fold in Gruyère.
  5. Allow mixture to cool slightly before mixing in one beaten egg.
  6. Roll out puff pastry and cut strips along the sides for braiding.
  7. Spread filling down the center; braid strips over the filling.
  8. Brush with remaining beaten egg and bake for 20–22 minutes until golden brown.
