Ingredients

  • Fettuccine or penne pasta
  • Butternut squash, peeled and diced
  • Olive oil
  • Onion, finely chopped
  • Garlic, minced
  • Fresh sage leaves, chopped
  • Vegetable broth
  • Non-dairy cream or coconut milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
  2. While the squash roasts, cook pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. In a skillet over medium heat, sauté onion in olive oil until translucent (about 5 minutes). Add garlic and sage; cook for another minute.
  4. Stir in roasted squash, vegetable broth, and non-dairy cream. Adjust sauce thickness with reserved pasta water as needed.
