Instructions

  2. Rinse and dry cherry tomatoes; place in a bowl. Slice top off garlic head.
  3. Drizzle tomatoes with olive oil, season with salt, pepper, and red pepper flakes; toss to coat.
  4. Spread seasoned tomatoes on a baking sheet alongside the garlic head, drizzle with olive oil, and roast for 25-30 minutes until blistered.
  5. Cook pasta according to package instructions; reserve 1 cup of pasta water before draining.
  6. Squeeze roasted garlic into a bowl; add roasted tomatoes and juices, mashing lightly.
  7. Combine mashed mixture with drained pasta, adding reserved pasta water as needed for desired consistency.
  8. Fold in fresh basil and serve topped with grated Parmesan cheese.
