  • 2 tablespoons unsalted butter, melted
  • ¼ cup crumbled blue cheese (or Gorgonzola for a milder flavor)
  • ¼ cup toasted walnuts, chopped
  • 2 tablespoons honey (plus more for drizzling)
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the pears and cut them in half lengthwise, removing the core.
  2. In a medium bowl, combine melted butter with lemon juice and cinnamon if desired. Brush this mixture generously onto the pear halves.
  3. Place the pear halves cut-side up on a parchment-lined baking sheet and roast for 25-30 minutes until tender but still holding shape.
  4. Remove from the oven and sprinkle warm pears with crumbled blue cheese followed by chopped walnuts.
  5. Drizzle honey over the top before serving and garnish with fresh thyme if desired.
