  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Prepare the Marinade: In a bowl, mix olive oil, minced garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper.
  2. Marinate the Chicken: Coat the whole chicken with the marinade in a resealable bag or bowl. Seal or cover and refrigerate for at least 30 minutes (or overnight).
  3. Preheat Oven: Set your oven to 375°F (190°C).
  4. Prepare for Roasting: Place the marinated chicken in a roasting pan with quartered onion inside. Pour any leftover marinade and add chicken broth around it.
  5. Roast: Cook in the oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C). Check periodically.
  6. Rest Before Serving: Let the roasted chicken rest for about 10-15 minutes before carving.
