  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup (40g) grated parmesan cheese
  • 2 cups (220g) shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Wrap the garlic head in foil after drizzling with olive oil and salt, then roast for about 40 minutes.
  2. Grease a 9×13-inch baking dish.
  3. Thinly slice the potatoes using a mandoline for even cooking.
  4. In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper over medium heat until smooth.
  5. Squeeze the roasted garlic into a bowl and mash it into a paste. Mix into the cream mixture.
  6. Layer the potato slices in the baking dish and pour the creamy mixture over them.
  7. Cover with foil and bake for approximately 40 minutes.
  8. Remove foil, top with remaining cheeses, and bake uncovered for another 30 minutes until golden brown.
  9. Let cool slightly before serving; garnish with fresh chives.
