  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • fresh ground pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast until soft (about 30 minutes).
  2. In a large pot, cover quartered potatoes with cold water and add salt. Bring to a boil and cook for about 15 minutes until fork-tender.
  3. Drain the potatoes, return them to the pot, and add the roasted garlic cloves.
  4. Warm the half and half and butter together until melted; pour over the potatoes. Season with salt and pepper, then mash until creamy but slightly chunky.
