  • 2 lbs. red potatoes
  • 1 head roasted garlic (1215 cloves)
  • ¼ cup salted butter
  • ½ cup vegetable or chicken broth
  • ½ cup heavy cream
  • 1 teaspoon fresh thyme
  • 1 ½ teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Spray the inside of your slow cooker with cooking spray. Add potato pieces, roasted garlic cloves, butter, thyme, salt, pepper, and broth.
  2. Cover and cook on high for 4-5 hours or low for 7-8 hours until potatoes are tender.
  3. Once cooked, add heavy cream to achieve desired creaminess. Use a hand mixer or potato masher for texture.
  4. Taste and adjust seasoning as needed before serving with chopped parsley on top.
