  • 20 Oreo Cookies (for crust)
  • 16 oz Cream Cheese (softened)
  • 1 cup Sour Cream
  • 1 cup Granulated Sugar
  • 3 large Eggs (room temperature)
  • ½ cup Unsalted Butter (melted)
  • 2 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs and combine with melted butter. Press the mixture firmly into the bottom of a springform pan to form the crust.
  2. In a large bowl, beat softened cream cheese until smooth. Add sugar, sour cream, and vanilla; mix until well combined. Gradually add eggs one at a time, mixing gently before folding in the red velvet cake mix until just combined.
  3. Pour the filling over the prepared crust and bake for about 60 minutes or until slightly jiggly in the center. Allow to cool before chilling in the refrigerator for at least four hours or overnight.
