Ingredients

Scale
  • 1 box (15.25 oz) red velvet cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 cup cream cheese frosting (store-bought or homemade)
  • 1 1/2 cups chocolate candy coating (white or dark)
  • Lollipop sticks

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, mix together the red velvet cake mix, eggs, vegetable oil, and water until smooth. Pour into a greased baking pan and bake for about 25–30 minutes or until a toothpick comes out clean. Allow to cool completely.
  2. Once cooled, crumble the cake into fine pieces in a bowl and mix in the cream cheese frosting until well combined.
  3. Roll the mixture into approximately 1-inch balls and place on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes.
  4. Melt the chocolate coating according to package instructions. Dip each chilled cake ball into the melted chocolate until fully coated and return them to the parchment paper.
  5. Insert lollipop sticks while the chocolate is still warm so it adheres properly. Let set until hardened.
