  • ¼ Cup granulated sugar
  • ½ Cup pumpkin puree
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together room temperature butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in pumpkin puree, egg, and vanilla extract until combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Gently fold in chocolate chips, mini vegan marshmallows, and broken graham crackers.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Press additional marshmallows, chocolate chips, and graham cracker pieces on top before baking.
  9. Bake for 12 to 14 minutes until edges are golden; centers should remain soft.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
