  • 6 slices turkey bacon, chopped
  • 4 sweet onions, thinly sliced
  • ½ cup apple cider
  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 2 cups freshly grated mozzarella cheese
  • 2 sheets frozen puff pastry, thawed
  • Fresh sage leaves

Instructions

  1. In a skillet over medium heat, cook the turkey bacon until crispy. Remove and drain on paper towels.
  2. In the same skillet, add onions with salt and pepper. Cook on medium-low heat for 25–30 minutes until golden brown. Stir in apple cider and cook for an additional 5 minutes.
  3. Preheat the oven to 400°F (200°C). Roll out puff pastry on a floured surface and place on parchment-lined baking sheets.
  4. Mix ricotta cheese and pumpkin purée in a bowl; season with salt and pepper. Spread mixture inside the pastry borders.
  5. Layer caramelized onions, turkey bacon, and mozzarella on top. Scatter sage leaves over filling and brush pastry edges with an egg wash.
  6. Bake for 25–30 minutes until puffy and golden brown. Sprinkle grated Parmesan before serving.
