  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 can (15 oz) pure pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 cup pure maple syrup (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a small bowl, combine melted butter, flour, light brown sugar, granulated sugar, and pumpkin pie spice for the streusel topping until crumbly.
  3. In a large bowl, whisk together pumpkin puree, granulated sugar, light brown sugar, vegetable oil, eggs, vanilla extract, and milk until smooth.
  4. In another bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, and salt.
  5. Gently fold dry ingredients into the wet mixture until just combined. Avoid overmixing.
  6. Pour half of the batter into the prepared pan. Sprinkle half of the streusel topping on top before adding the remaining batter and covering with the rest of the streusel.
  7. Bake for 60-80 minutes or until a toothpick inserted in the center comes out clean.
  8. Prepare the maple glaze by whisking powdered sugar and maple syrup until smooth; drizzle over warm bread.
