  • 4 boneless, skinless chicken breasts
  • 3 soft pretzels (about 5 oz), crushed
  • 2 large eggs
  • 1/4 cup olive oil
  • 2 tbsp Dijon mustard
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper.
  3. Crush pretzels into crumbs; set aside. In another bowl, whisk eggs. In a separate bowl, mix cheddar cheese and Dijon mustard.
  4. Coat each chicken breast in egg, then press into pretzel crumbs to cover completely.
  5. Place chicken in the prepared dish, drizzle with olive oil, and bake for 25-30 minutes until golden and cooked through (internal temperature of 165°F /74°C).
  6. For the sauce, combine cream, lemon juice, garlic powder, and honey in a saucepan over medium heat until warmed through.
  7. Serve the baked chicken topped with the mustard-cheddar sauce.
