  • 3 ripe bananas, mashed
  • 1/3 cup creamy peanut butter
  • 1/2 cup sugar (or honey/maple syrup)
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup jelly or jam (grape, strawberry, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, mash the ripe bananas until smooth. Stir in peanut butter, sugar, melted butter, vanilla extract, and egg until well combined.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined; do not overmix.
  4. Pour half of the batter into the prepared pan. Add dollops of jelly over the batter and swirl gently with a knife. Pour remaining batter on top and repeat with more jelly swirls.
  5. Bake for 50-60 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
