  • 1 medium onion (peeled and halved)
  • 2 tablespoons avocado oil or olive oil
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Allow the chicken to rest at room temperature for 30-60 minutes before cooking.
  2. Preheat your oven to 425°F (218°C) and line a roasting pan with parchment paper.
  3. Place the chicken breast side up in the pan, pat dry, and stuff the cavity with onion halves.
