Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional garnishes: chopped parsley, crushed red pepper flakes, shredded cheese

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat. Add the chicken pieces seasoned with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown and cooked through; remove from skillet.
  2. Pour low-sodium chicken broth into the skillet to deglaze, scraping up brown bits.
  3. Stir in honey BBQ sauce and simmer for 2-3 minutes.
  4. Add uncooked penne pasta and enough water to cover it (about 1 to 1½ cups). Cover and simmer for 12-15 minutes until pasta is tender.
  5. Return chicken to the skillet. Mix well and let simmer for another 2-3 minutes.
  6. Adjust seasonings if necessary, then garnish with parsley, red pepper flakes, and cheese if desired.
