  • 1 lb smoked sausage (kielbasa or turkey sausage), sliced
  • 1 1/2 cups uncooked long-grain rice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 1/2 cups chicken broth
  • 1/2 cup barbecue sauce
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the sausage slices until browned; remove and set aside.
  2. In the same skillet, sauté onion until translucent, about 5 minutes. Add garlic and cook until fragrant.
  3. Stir in uncooked rice and toast for 2-3 minutes.
  4. Pour in chicken broth and barbecue sauce; stir well and scrape any bits off the bottom of the skillet.
  5. Return the sausage to the pan, bring to a simmer, cover, and reduce heat. Cook for 18-20 minutes until rice is tender.
  6. Let it sit covered for an additional 5 minutes before fluffing with a fork.
