  • 1 lb sausage (Italian or smoked), sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté sausage slices for about 4–5 minutes until browned. Remove and set aside.
  2. In the same pan, add onion and bell pepper; sauté for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds.
  3. Add smoked paprika and black pepper; mix well. Incorporate uncooked rice and toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; return the sausage to the pan. Stir to combine.
  5. Bring to a boil, then cover and simmer on low heat for about 20–22 minutes until rice is tender.
  6. Let rest covered for an additional 5 minutes before fluffing with a fork.
