Instructions

  1. Preheat your oven to 350°F (176°C) and butter a 9-inch pie plate.
  2. Place cranberries in the prepared pie plate and sprinkle with chopped pecans and half a cup of sugar.
  3. In a medium bowl, cream together softened butter and one cup of sugar until smooth.
  4. Beat in almond extract (or vanilla) and eggs one at a time until well combined.
  5. Gradually add flour and salt to the mixture, mixing until just combined.
  6. Spread the batter evenly over the cranberry mixture in the pie plate.
  7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out with moist crumbs.
  8. Allow to cool slightly before serving warm.
