  • 8 oz egg noodle pasta
  • 3 tablespoons butter (divided)
  • 1.5 pounds cremini mushrooms (halved or quartered)
  • 1 onion (sliced)
  • 3 cloves garlic (crushed)
  • 1/2 cup dry white grape juice
  • 1.5 cups mushroom stock
  • 2 tablespoons flour
  • 1/2 cup sour cream or Greek yogurt
  • Fresh thyme
  • 2 teaspoons Dijon mustard
  • 1 teaspoon smoked paprika
  • Sea salt and black pepper to taste

Instructions

  1. Cook the egg noodles according to package directions; drain and toss with butter.
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Sauté the mushrooms until browned; remove from skillet.
  3. Add remaining butter, onions, and garlic to the skillet; sauté until tender.
  4. Deglaze with grape juice, scraping up bits from the pan.
  5. Whisk flour into mushroom stock; add to skillet along with mushrooms, thyme, mustard, and paprika. Simmer until thickened.
  6. Mix a few tablespoons of sauce into sour cream before returning it to the skillet; stir well.
  7. Season with salt and pepper and serve over noodles.
