  • 1 block firm tofu (pressed and cubed)
  • 8 ounces sliced mushrooms (cremini or shiitake)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 bell pepper (sliced)
  • 1/2 cup snap peas
  • 1/2 cup broccoli florets
  • 1/2 teaspoon red pepper flakes
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions

  1. Press tofu to remove moisture and cut into cubes.
  2. Heat vegetable oil in a large skillet over medium-high heat; add tofu and cook until golden brown on all sides.
  3. Push tofu aside; add garlic and ginger to the pan and sauté until aromatic.
  4. Add mushrooms and vegetables; stir-fry until veggies are tender yet crisp.
  5. Mix sauce ingredients (soy sauce, rice vinegar, maple syrup, sesame oil, cornstarch mixture) and pour over stir-fry; cook until combined and thickened.
  6. Serve hot, garnished with sesame seeds and green onions.
