  • 8 oz spaghetti
  • 2 cloves garlic, minced
  • 1/2 cup diced onions
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook spaghetti according to package directions; drain and set aside.
  2. In a skillet over medium heat, add olive oil. Season chicken with salt, pepper, and smoked paprika; cook for 6-7 minutes on each side until fully cooked. Slice into strips.
  3. In the same skillet, melt butter and sauté onions and garlic for 2-3 minutes until softened.
  4. Add chicken broth and bring to a gentle simmer. Stir in heavy cream for another 2 minutes.
  5. Lower heat and mix in shredded Monterey Jack and Parmesan until melted.
  6. Toss in the cooked spaghetti until well coated in sauce. Top with sliced chicken and fresh parsley.
