  • 1 teaspoon dried thyme

  • 2 cups cooked brown rice or quinoa
  • 1 cup roasted chickpeas
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • â…“ cup crumbled feta cheese
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt or coconut yogurt
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • 3 tablespoons olive oil for lemon vinaigrette
  • 2 tablespoons fresh lemon juice for lemon vinaigrette
  • 1 teaspoon honey
  • 1 small clove garlic, minced for lemon vinaigrette
  • ½ teaspoon dried oregano for lemon vinaigrette
  • Salt and pepper to taste for lemon vinaigrette

Instructions

  1. 1. Marinate the steak: Whisk olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Add the sirloin steak and marinate for at least 30 minutes.
  2. 2. Cook the steak: Grill or skillet-cook the steak over medium-high heat for 4–5 minutes per side until cooked to your liking. Let rest before slicing.
