  • 1 lb sirloin steak
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice or quinoa)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt or coconut yogurt
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper (to taste)
  • 2 tbsp lemon juice (for vinaigrette)
  • 1 tsp honey (omit for Whole30)

Instructions

  1. Marinate the steak by combining olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak well and let it marinate for at least 30 minutes.
  2. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl. Chill in the fridge.
  3. Whisk together vinaigrette ingredients: olive oil, lemon juice, honey, garlic, oregano, salt, and pepper.
  4. Sear the marinated steak in a hot skillet for about 4-5 minutes on each side until cooked to your preference. Let it rest before slicing.
  5. Assemble your bowl with cooked grains as the base and top with sliced steak, cherry tomatoes, cucumber, onion, olives, and tzatziki sauce.
