  • 2 Tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ½ tsp each salt, oregano, crushed red pepper flakes, smoked paprika
  • ¼ tsp ground black pepper
  • ½ cup sun-dried tomatoes (roughly chopped)
  • ½ to 1 cup vegetable broth
  • 2 15-oz cans butter beans (drained)
  • 1 cup chopped fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 Tbsp chopped fresh basil

Instructions

  1. In a large sauté pan over medium heat, melt 2 tablespoons of unsalted butter. Add 4 minced garlic cloves and season with salt, oregano, crushed red pepper flakes, smoked paprika, and black pepper. Sauté for about 2 minutes until fragrant.
  2. Stir in ½ cup chopped sun-dried tomatoes and ½ to 1 cup vegetable broth along with 2 drained cans of butter beans. Cook uncovered for 5 minutes over medium heat.
  3. Remove from heat and fold in 1 cup chopped fresh spinach until wilted. Stir in 1 cup heavy cream and ½ cup grated Parmesan cheese along with 2 tablespoons chopped fresh basil until combined.
