  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a pot over medium heat; sauté chopped onion until translucent. Add garlic until fragrant.
  2. Stir in chopped tomatoes, cumin, paprika, turmeric, tomato paste, salt, and pepper; simmer for 5 minutes.
  3. Add canned white beans and one cup of veggie broth; stir to combine.
  4. For stovetop: Simmer for 20 minutes until thickened. For Instant Pot: Seal lid and cook on high pressure for 10 minutes.
  5. Adjust consistency with additional broth if needed before serving hot.
