  • 200 g granulated sugar
  • 2 tbsp lemon zest (from 23 large lemons)
  • 270 g almond flour
  • 3 large egg whites (room temperature)
  • 1/4 tsp fine sea salt
  • 1 1/2 tsp pure almond extract
  • 3 tbsp fresh lemon juice
  • 50 g granulated sugar (for rolling)
  • 30 g powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine granulated sugar and lemon zest by massaging together until fragrant.
  3. Sift almond flour into a mixing bowl and add the lemon sugar; whisk to combine.
  4. In another bowl, whip egg whites with salt until stiff peaks form.
  5. Gently fold in the almond extract and lemon juice with one-third of the almond mixture until combined.
  6. Gradually fold in the remaining almond flour mixture until you have a thick paste.
  7. Roll dough into balls, first coating in granulated sugar then dusting with powdered sugar.
  8. Place on baking sheet, gently pressing down to create cracks on top.
  9. Bake for 22–25 minutes until set and lightly golden on the bottom.
  10. Cool completely on a wire rack before serving.
