  • 1/2 cup granulated sugar (for crust)
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix together the flour, sugar (for crust), baking powder, melted butter, and salt until crumbly. Reserve half a cup of this mixture.
  2. Press the remaining crumb mixture into an 8×8-inch baking pan lined with parchment paper. Bake for about 12-15 minutes until lightly golden.
  3. While the crust bakes, whisk together the eggs, sugar (for filling), flour (for filling), lemon juice, and lemon zest in another bowl until smooth.
  4. Once the crust has cooled slightly, pour the lemon filling over it and sprinkle with the reserved crumb mixture.
  5. Return to the oven and bake for another 20-25 minutes or until set and lightly golden on top.
  6. Let cool completely before refrigerating for at least an hour. Slice into squares and enjoy!
