  • 1 egg yolk
  • 100 ml warm water
  • 100 g sour cream
  • 100 g crème fraîche
  • 250 g Hokkaido pumpkin
  • 1 red onion
  • 100 g feta cheese
  • 10 walnuts
  • Fresh thyme for garnish

Instructions

  1. In a bowl, mix the flour, olive oil, salt, egg yolk, and warm water until a smooth dough forms. Knead for about 5 minutes.
  2. Cover the dough with a damp cloth and let it rest for 30 minutes.
  3. Preheat the oven to 220 degrees Celsius (428 degrees Fahrenheit).
  4. In another bowl, combine sour cream and crème fraîche; season with salt, pepper, and nutmeg.
  5. Slice the pumpkin into thin strips and cut the onion into rings. Crumble the feta cheese and roughly chop the walnuts.
  6. Roll out the rested dough into thin circles, spread the creamy mixture on top, and layer with pumpkin slices, onion rings, feta, and walnuts.
  7. Bake for 12-15 minutes until golden brown. Garnish with fresh thyme before serving.
