  • ¾ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 4 large eggs (room temperature)
  • 1 (15.25-ounce) box vanilla cake mix
  • ½ cup neutral oil (vegetable or canola)
  • 1 cup water
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, combine the ricotta cheese, granulated sugar, vanilla extract, and eggs. Beat until smooth.
  3. In another bowl, prepare the cake batter as directed on the package using the cake mix, neutral oil, water, and eggs until smooth.
  4. Pour the cake batter over the ricotta mixture in the baking dish—do not stir.
  5. Bake for 50–60 minutes until golden brown and a toothpick inserted into the cake comes out clean.
  6. Allow to cool completely before slicing.
