  • 1 lb ground beef
  • 1/2 cup plain bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (minced)
  • 4 garlic cloves (minced)
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes (more or less to taste)
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp black pepper (more or less to taste)
  • 2 tbsp olive oil (for cooking)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 4 garlic cloves (minced)
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1/4 cup fresh grated or shaved parmesan cheese

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, egg, minced onion, garlic, parsley, basil, red pepper flakes, salt, and black pepper. Mix well and form into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs in batches until golden on all sides (about 5-7 minutes). Remove and set aside.
  3. Sauté diced onions and carrots with minced garlic in the same pot until softened (about 5 minutes).
  4. Stir in diced tomatoes, water, beef stock, tomato paste, salt, red pepper flakes, parsley, basil, and oregano. Bring to a simmer.
  5. Return meatballs to the pot and simmer together for about 20 minutes.
  6. Add gnocchi according to package instructions and cook until they float.
  7. Serve hot with grated parmesan on top.
