  • 4 beef sausages
  • 1 large onion, sliced
  • 4 large potatoes, peeled and sliced
  • 2 large carrots, peeled and sliced
  • 3 cups chicken broth
  • ½ cup fruit juice (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, brown the beef sausages until caramelized. Remove and set aside.
  2. Add chopped bacon to the pot and cook until crispy.
  3. Stir in sliced onions and minced garlic; sauté for about two minutes until softened.
  4. Layer potatoes and carrots over the bacon mixture.
  5. Pour in chicken broth (and white grape juice if using) along with thyme, salt, and pepper.
  6. Return the browned sausages to the pot; bring to boil then reduce heat to low.
  7. Simmer for about an hour until vegetables are tender and flavors meld beautifully.
  8. Garnish with fresh parsley before serving hot.
