  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1–2 tablespoons milk (as needed for texture)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
  5. Roll dough into small balls (about 1 inch), shape into ovals, and press down with a fork for a classic crosshatch pattern. Sprinkle with extra sugar before baking.
  6. Bake for 8–10 minutes until lightly golden. Cool on a wire rack before adding filling.
  7. For the filling, beat together remaining peanut butter and softened butter until smooth. Gradually add powdered sugar and vanilla extract; mix until creamy, adjusting texture with milk as needed.
