  • 3–4 large peaches, peeled, pitted, and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine 1 cup of flour, 1/4 cup of sugar, and 1/4 teaspoon of salt. Cut in 1/2 cup cold, cubed unsalted butter until crumbly. Press into a lined 9×9-inch baking pan and bake for 15–18 minutes until lightly golden.
  3. While cooling, toss 3–4 sliced peaches with 1/2 cup sugar, 2 tablespoons flour, 1 tablespoon lemon juice, and 1/2 teaspoon vanilla extract.
  4. For the crumb topping, mix together 1/2 cup flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt; stir in 1/4 cup melted butter until crumbly.
  5. Spread peach filling over the crust and sprinkle with crumb topping. Bake for 45–50 minutes until golden brown.
  6. Cool completely before slicing into squares.
